|Simple beetroot soup|beetroot|750g beetroot cooked1 onionc diced2 thyme sprigs2 tablespoon olive oil2 bay leaves500ml stock chicken or vegetable|Warm the oil in a pan and saute the onion till soft about 10 mins. Dice the cooked beetroot and add to the pan with the herbs and stock. bring to the boil and simmer for 10 mins. Discard the herbs and puree season to taste.
