|Easy and simple roasted delicata squash|red onion squash|1 delicata squash thinly sliced into rings or half moons1 red onion thinly sliced1 rosemary sprig chopped2 tablespoon olive oil|Preheat the over to 180 C. Toss the thinly sliced squash pieces and rosemary togther in a bowl with the olive oil ensuring the squash is well coated. Season to taste with salt and pepper.Spread out on a baking tray in a single layer and roast in the oven for 20 minutes until the squash are fork tender.
