|A delicious veg curry with an unsuspecting addition - rhubarb!|rhubarb|1 onion3 cloves garlic crushed3 rhubarb stalks. Add more if smaller in size1 aubergine2 teaspoon garam masala or mix together 1 tsp ground coriander 1 tps cumin and 2 tsp paprika½ teaspoon tumeric450ml vegetable stock250g lentils1 lime250ml yoghurt250g rice|Fry the onion and garlic until the onion is softAdd the garam masala and turmeric and coat the onionsAdd in the rhubarb aubergine lentils and veg stockSimmer for 10 to 15 minutes until the veg is just soft and lentils are cooked through. Add more veg stock if required.Grate the zest of one lime into the yogurt and mix wellSqueeze the juice of one-half of the lime into the lentils and add salt and pepper to taste. Serve with a side of rice and zested yogurt.|10.00 minutes|4|
