|Your cheese board's best friend. Also great on burgers.|red onion|2 large red onions about 550g thinly sliced2 teaspoon olive oil or butter120g brown sugar125ml red wine vinegar50ml balsamic vinegarsalt and pepper|In a large non-reactive saucepan heat the oil or butter. Add the red onions and 2 tablespoons of the brown sugar and cook over a gentle heat for about 25 minutes or until the onions begin to caramalise.Stir in the rest of the vinegar and the sugar. Increase the heat and stir often until most of the liquid has evapourated about 15 mintues.Season to taste with salt and pepper and pot into sterilised jars. Keeps for 3 months and makes an excellent christmas present!|5.00 minutes|10|
