|Red Cabbage Braised with Vinegar and Bacon|red cabbage apple|450g streaky bacon cut into 2.5cm pieces2 cup onions chopped1 red cabbage cored and finely slivered3 Granny Smith apples or other tart apples cored and cut into cubes1 cup sultanas¾ cup dry red wine¾ cup red wine vinegar3 tablespoon dark brown sugar2 teaspoon caraway seeds1 teaspoon dried thyme leaves½ teaspoon freshly ground black pepper½ teaspoon salt|Cook the bacon in a large deep skillet or dutch oven over low heat for 15 minutesAdd the onions and cook until wilted 10 minutes. Add remaining ingredients and toss well.Cover the skillet and cook over medium heat for 1 1/4 hours stirring occasionally. If necessary add a bit more liquid.
