|This warming satisfying soup is great on cold days and is a perfect way to use up any backlog of onions.||500g onions peeled halved and sliced25g butter2 tablespoon flour1.5litre water or veg stock1 tablespoon creme fraiche1 tablespoon brandy optional4 slices of bread such as sourdough or a baguette50g Gruyere cheese grated|Gently melt the butter in a large pot. Add the onions coat and turn to low. Cook gently for 30 mins untill very tender.Stir in the flour then add the stock stir bring to the boil and simmer for 30 mins.Add the creme fraiche and the brandy bring back to a simmer. Check the seasoning.Toast the bread sprinkle on the grated cheese and then grill till melted.Spoon the soup into 4 bowls and float the toast on top.
