|Indian Cucumber Salad|cucumber|½ cucumber deseeded and diced1 green chilli finely chopped2 teaspoon lemon juice½ teaspoon light brown sugar50g roasted peaunts roughly crushed30g fresh coconut grated1 tablespoon fresh coriander chopped1 tablespoon vegetable oil½ teaspoon salt½ teaspoon black mustard seeds¼ teaspoon cumin|Combine the cucumber chilli lemon juice and sugar in a bowl and stir well. Sprinkle the roasted peanuts and coconut over and lightly combine. Heat the oil in a small frying pan and add the mustard seeds (should start to pop). Add the cumin seeds and fry for another 30 seconds and turn off the heat. Pour the spiced oil over the salad and toss again. Check the seasoning.
