|This simple stuffed peppers recipe looks almost too good to eat. Bursting with Mediterranean flavour they're perfect for a healthy vegetarian supper or delicious lunch. 15 minutes preparation and then just 25 minutes in the oven. Easy.|basil bell pepper cherry tomatoes red onion|4 peppers1 tablespoon olive oil200g feta cheese crumbled200g cherry tomatoes halved50g black olives pitted1 red onion thinly slicedzest of one lemon1 clove garlic crushed4 tablespoon basil|Heat the oven to 200 degrees Celsius. Halve each pepper lengthways and discard the seeds and membrane. Brush pepper with a little oil and place on baking tray.In a bowl combine feta tomatoes olives onion lemon zest garlic and half the basil. Use it to fill each pepper. Drizzle with the remaining oil and bake for about 25 minutes or until the peppers are tender. Garnish with basil.|10.00 minutes|4|House and Garden
