|An alternative to mango chutney using seasonal fresh apriocts.|apricots chilli red onion|3 apricots diced (1/2 cup I use frozen)1 large red onion peeled & diced1 Tbs fresh ginger minced or grated5 cardamom pods grounded or 1 tsp ground cardamom1/4 tsp salt1/2 tsp cinnamon1 small green chile seeded and diced stem removed100g brown sugar120ml apple juice|Add all ingredients to a medium pot and bring to a simmer over medium heat. Once simmering lower the heat and leave to cook for 45 minutes uncovered.Let cool slightly. Transfer to an airtight container and store in the fridge.
