|Broccoli Parmesan Fritters|broccoli|350g broccoli split into small florets2 eggs125g plain flour2 garlic cloves crushed75g parmesan cheese grated1 L olive oil for frying|Steam the broccoli till just soft cool and lightly mash.Beat the eggs in a large bowl add the flour garlic and parmesan salt and pepper. Parmesan is salty so go lightly with the salt.Stir in the broccoli and adjust seasoning.Heat the oil in a large frying pan.Spoon 2 tablespoon mounds of the mix onto the pan and flatten with the back of the spoon leaving a space between each fritter. Fry for 2 to 3 mins till golden brown turn over and fry for another 1 to 2 mins till golden on the other side.Drain on kitchen paper and serve warm.|30.00 minutes|1|/boxmaster
